HOW TO COOK RED BEANS AND RICE POTTAGE - Gimbiya - 06-26-2018

RED BEANS AND RICE PORRIDGE.
Red beans are a good source of soluble fibre and protein. Help reduce hypertension, help in maintaining normal blood pressure. Help the arteries and vessels and ensures smooth blood flow in
your body. Aside proteins, red beans are packed with fiber, folate, manganese, phosphorus, potassium, copper, magnesium, zinc, iron, Thiamine, and so on. Helps prevent constipation asĀ  the fiber content is high.
Red beans and rice is very nutritious and filling if cooked the right way. Red beans can be cooked soupy to serve with boiled rice, thick as pottage or boiled and served as a side with rice and stew. Can be cooked and served with dodo (fried ripe plantains) or yam or even boiled potatoes.
This red beans and rice belleful recipe is easy. If you can cook beans, if you can boil rice, then this shouldn't be difficult. It's delicious and restores energy like super super.
TIP: Red beans take much longer to cook. Boiling with a pressure cooker will help save time and gas.
HOW TO COOK RED BEANS AND RICE POTTAGE.
INGREDIENTS:
2 Cups red beans
2 cups boiled rice
4 medium sized tomatoes
2 large tatasheys (red bell pepper)
A handful curry leaves (Optional)
1 cup shredded chicken
1 large onion
Salt to taste
2 seasoning cubes
11/2 cups soya oil
Water
DIRECTION:

1. Soak beans overnight, rinse and boil till soft. Mash the cooked beans if you like. I didn't. Roast or stir fry the chicken with a pinch of salt and onion and set aside.

2. Wash, chop and stir fry vegetables with seasoning cubes. Add the roast chicken and stir. Check for salt and set aside. If you like your rice and beans thick and dry, then mash the cooked beans before adding other ingredients. I like mine a bit soupy, so, I did not mash.

3. Add to the cooked beans and stir. Beans should be watery, not dry.

4. Add the almost cooked boiled rice, stir and check for taste. Cover and leave to simmer till the rice is completely cooked and soft. Sprinkle in the curry leaves if yo like them, stir. Turn off heat and leave to cool a bit before serving.
