INGREDIENTS:
2 cups dried beans
2 cups rice
3 cups coconut milk (Made from 2 sachets coconut powder)
2 bay leaves
2 cups vegetable oil
1 medium sized onion
1 teaspoon crushed garlic
2 teaspoons grated ginger
1 green bell pepper
2 seasoning cubes
2 teaspoons dried thyme leaves
Salt to taste
Chicken stock
Water
DIRECTION:
1. Fry onion, garlic, ginger, seasoning cube and green pepper till onion begins to brown.
2. Add the washed beans and stir, let it cook a bit in the oil for about five minutes.
3. Add the washed rice and coconut milk and stir.
4. If milk doesn't cover the rice completely, add some stock and/or water to completely cover the beans and rice in the pot. Drop in the bay leaves and cover to cook slowly on very low heat till rice begins to soften before you add salt and seasoning cubes. If pot starts to dry up when beans and rice are still hard, add some more water or stock and continue cooking on low heat till both rice and beans cook well.
Allow the pot to dry and begin to get charred while cooking in bottom pot oil, so it brings out the coconut flavour.
5. Serve with your choice of sauce or just enjoy with some proteins of choice. We served with grilled chicken tomato stew.
