There were no shrimps available, so, I made do with crayfish. Will try and get shrimps next time. If you
are still thinking of how to bribe hubby this valentine season, think no more. Give him this coconut rice and see your dreams come true. The results were amazing. I have not cooked coconut rice for my
family in a long while and yum yum... the comments that flowed when this dish was served, I can't tell you today. My family went gaga. There was no single soul that did not eat too much.
cooking coconut ricetakes some time when you want to do it my way, The original way. However, if you are in a hurry or are planning to serve this on a weekday, there are some short cuts:
- Buy coconut milk or powdered coconut milk in sachets
- Buy bread crumbs
- Make your milk ahead of time and store in the fridge
- Boil and fry your chicken a day or some days ahead and store in the fridge. If you do this, the problem is; with kids in the house, who are so used to enjoying coated chicken from fast food outlets, they will finish the chicken before you are ready to cook the coconut rice.
Wash coconut before grating, you can easily cook with coconut powder or milk sold at the market.

Pour in hot water to extract the milk and coconut oil from the chaff
You may want to chop coconut in tiny pieces and blend to save time. Filter out the coconut chaff
INGREDIENTS:
- 3 cups rice
- 1 kg chicken
- 2 medium sized coconuts or 1 pack Emma coconut powder
- 2 medium sized onion bulbs
- 2 seasoning cubes
- 1 tablespoon roughly ground Fresh pepper
- Salt to taste
- Vegetable oil. I used grand soya oil
- 1 cup roughly ground crayfish
- 2 medium sized smoked cat fish
- Water
HOW TO MAKE COATED CHICKEN:
- 3 egg whites or 3 complete eggs
- 2 cups breadcrumbs homemade or store bought ( Flour can be used as a substitute but I prefer coating chicken with breadcrumbs)
First for the coconut rice, Fry your roughly ground or chopped pepper, onion, crayfish before adding the smoked fish
Add chicken stock and allow to boil, then add coconut milk

Cooking Steps For This Coconut Rice:
- 1 fry onion, pepper and a seasoning cube in oil
- 2. add bone picked, washed smoked fish
- 3. add the chicken stock, check for salt and allow to boil
- 4. add coconut milk and bring to a boil
- 5. Add rice and crayfish
- 6. reduce heat and allow to simmer and cook soft.
- 7. Serve with crisp, coated fried chicken
- 8. Enjoy your meal!
Add washed crayfish, seasoning cubes, salt, rice to boiling coconut milk in the pot, check taste, cover the pot and let it boil
Check and taste for salt and seasoning in coconut milk

reduce heat and allow pot to simmer until coconut rice is cooked
Boil washed chicken with salt, chopped onion and seasoning cube before coating, you can marinate instead before coating, if that's how you like yours.
For the coated chicken, first boil chicken with salt, onion and seasoning cubes. Take out chicken from stock and start the coating process by first dipping in egg white before bread crumbs. I dried my left over bread in the oven before pounding. You can blend yours.

I did not add curry, thyme, tomatoes or any spices because I wanted the original coconut flavor in my rice and yes, it was so like fresh coconut milk. Extra super de li cious. If you don't have time to grate, chop and bled or buy coconut powder and dilute with water to use.
