CHICKEN GIZZARD CURRY WITH MIXED VEGETABLES - Gimbiya - 07-27-2018

 Chicken gizzard curry with vegetables.
This easy but tasty mixed vegetable sauce also known as curry sauce can be cooked with any protein of choice; chicken parts, snails, shrimps, shredded beef, shredded chicken and so on. I named this chicken gizzard mixed vegetable sauce because it's cooked with mixed vegetables and with chicken gizzards. This was served with boiled rice.

Quantity serves 5.
INGREDIENTS:

 1/2 kg chicken gizzards

1 cup oil (I used soya oil)

1 medium sized red onion

2 spring onions with leaves

2 medium sized tomatoes

1 tablespoon ground fresh peppers

2 small carrots

1 tablespoon curry powder

2 seasoning cubes

Salt to taste

1 tablespoon baking flour or corn flour to thicken (Optional. I didn't thicken mine)

1 cup water to start with

COOKING DIRECTION:

1. Stir fry washed gizzards with diced red onion, one seasoning cube, tomatoes, curry and pepper for about 3 to 5 minutes, check and add water, check for salt and cover.

2. Reduce heat and simmer for about 15 minutes or till gizzards cook through. Add the remaining seasoning cube. Check for salt again, if you would like to thicken your sauce, at this time, mix the flour with some water into a paste and add to the pot, stir and mix well to desired thickening. 

3.  Add the chopped carrots and spring onion, stir and turn off heat so you don't overcook vegetables.
